This casserole starts with ground beef with seasonings, tortillas, cheese and is topped with cream of mushroom soup that makes a creamy sauce. Add your favorite taco toppings and you have a quick and delicious meal the entire family will love.
This recipe comes from my sister-in-law and is a favorite in her family. My whole family loves this recipe and my adult daughter says it tastes like enchiladas without the red enchilada sauce. We topped this casserole with lettuce, tomato, sour cream and salsa/taco sauce.
What I like the most about this recipe is it's made with spices you have at home and there is not a taco seasoning packet in the recipe; you can spice it up however you like with lots of good stuff!
What You Need
Flour Tortillas (or corn tortillas, if you prefer)
Ground Beef or Ground Pork
Yellow Onion, White Onion or Red Onions
Green Chiles
Chili Powder
Cumin
Garlic Powder
Salt
Black Pepper
Cheddar Cheese
Cream of Mushroom Soup

How to Make Taco-Rito Casserole
Once the ground beef and onion are cooked, drain the grease, add the spices and start layering! So simple!
Step 1: Preheat oven to 375°F and spray a 9x13 inch baking pan with non-stick cooking spray and set aside. In a medium pan, cook the ground beef and onion on medium-high heat on the stove top. Using a wooden spoon, break up the ground beef into smaller pieces. Drain any excess grease. Stir in green chilies, chili powder, cumin, garlic salt, salt and black pepper in to the beef mixture. Simmer on low for 10 minutes.
1)Browning the ground beef and onion; 2) spices added to ground beef mixture; and 3) all ingredients simmering for 10 minutes.
Step 2: While the beef mixture is cooking, cut 9 taco size tortillas in half and put a bottom layer in the prepared 9x13 inch baking dish or casserole dish.
Step 3: Alternate layers of tortillas, meat mixture, and grated cheddar cheese ending with tortillas on top. Pour 1 can of cream of mushroom soup over the top and spread over all. Bake uncovered for 30 minutes. Allow the casserole to cool for a few minutes, then top with your favorite taco toppings and serve!

How to Store Taco-Rito Casserole
The casserole may be stored in an airtight container (without toppings) in the refrigerator for up to 3 days. It heats up nicely in the microwave.
