There’s nothing quite like a pot of Chili Soup simmering away on the stove top, filling the kitchen with delicious aromas. Whether it’s game day, a cold winter night, or your first time making chili from scratch, this chili recipe is a go-to favorite in our house. Made with simple chili ingredients, a rich tomato base, and hearty ground beef this homemade Chili Soup recipe delivers so much flavor.

If you’ve followed me for any length of time, you know I love recipes that are both easy and delicious. I’m a self-taught cook who learns by watching, listening, and then tweaking a recipe until it’s something I truly love and know my family will eat. This is one of those tried-and-true recipes, shortcuts included, that we keep on regular rotation all winter long.

My favorite shortcut when making Chili Soup is using two cans of Bush’s Chili Beans in Mild Sauce. Those chili beans add so much flavor and create an extra layer of delicious depth without any extra work. It is one simple step that makes a big difference.

The best part, my adult daughters now make the same recipe they grew up eating, which tells me it is truly a keeper. The base of this recipe came from my sister from another mister, my lifelong source for all things delicious, and it has been lovingly tweaked over the years into this comforting Chili Soup we make again and again.

  • This recipe only calls for 1/2 cup chopped onion because we are not onion lovers. If you are, add more!

  • Green Bell Pepper is a great add to this recipe.

  • Serve with your favorite toppings like sour cream, cheddar cheese, green onions, or crunchy tortilla chips.

  • Try fun variations like chili over hot dogs, spooned onto frito pie, or mixed with elbow macaroni next time.

How to Make Quick & Easy Chili Soup Recipe

Step 1: Chop enough onion for 1/2 cup and set aside. Heat a large skillet or dutch oven over medium-high heat. Cook and stir 1 pound of ground beef, breaking into small pieces with a wooden spoon until browned and crumbly, 5 to 7 minutes. Drain and discard excess fat. Add 1/2 cup chopped onion and 1 teaspoon minced garlic to cooked beef and cook until onion is translucent, 3 to 4 minutes.

Step 2: In a dutch oven or large pot, combine 2 - 16 oz cans of Bush's Chili Beans in Mild Sauce, 2 - 14.5 oz cans diced tomatoes, 1 - 11.5 oz can tomato juice and cook on medium heat bringing the mixture to a boil. Add the meat mixture and stir to combine.

Step 3: Add the spices - 1 teaspoon garlic powder, 1 teaspoon salt, 1 teaspoon black pepper, 1 tablespoon chili powder (I use mild) and 1 1/2 tablespoons cumin. Stir to combine and let everything simmer on medium-low heat until you have a thicker chili, about 45 minutes. Give the soup a try and add additional salt and pepper to taste.

How to Store Quick & Easy Chili Soup Recipe

To store Chili Soup, let it cool completely, then transfer it to an airtight container. Refrigerate for up to 4 days. The flavors often get even better the next day, making leftovers perfect for quick meals.

To freeze Chili Soup, cool it fully and portion it into freezer-safe containers or zip-top freezer bags. Leave a little space at the top for expansion, label with the date, and freeze for up to 3 months. Chili freezes very well and reheats beautifully.

To reheat, thaw overnight in the refrigerator if frozen, then warm gently on the stovetop or in the microwave, stirring occasionally until heated through.
