There’s nothing quite like a bowl of Creamy Sausage Tortellini Soup on a chilly evening. It’s a comforting soup loaded with Italian flavors, tender cheese tortellini, and a rich, creamy tomato broth that warms you from the inside out. 


This recipe came from a coworker I worked with a several years ago. She brought it to a potluck, and after just one bite, I knew I had to have the recipe! Everyone at the table was raving about it, and it’s been a family favorite in our house ever since. It’s the perfect dish for a chilly evening, and the leftovers reheat well and it's just as delicious the next day!


This delicious soup is made with simple ingredients that come together quickly for a satisfying complete meal. Serve it with a side of crusty bread or a simple green salad and you’ve got one of the best tortellini soup dinners for busy weeknights or relaxing weekends.


What You Need

  • Italian Sausage

  • Basil, Garlic & Oregano Canned Diced Tomatoes (Italian seasoned diced tomatoes)

  • Chicken Broth

  • Garlic and Herb Cream Cheese

  • Cheese Tortellini

  • Fresh Spinach


Tips for Making Creamy Sausage Tortellini Soup

  • Turkey sausage or pork sausage will work in this soup

  • Add fresh tortellini or dried tortellini and cook over medium heat until the tortellini cooks through and is tender.

  • You can easily substitute vegetable broth or beef broth in place of chicken broth for this recipe.

  • For extra flavor, sprinkle in red pepper flakes, black pepper, or fresh herbs like basil before serving.

  • This creamy tortellini soup also works great in a slow cooker or crock pot for hands-off cooking.

How to Make Creamy Sausage Tortellini Soup

Step 1: In a large pot, brown the Italian sausage over medium-high heat in a large Dutch oven. Use a wooden spoon to scrape up all those browned bits from the bottom of the pot for extra flavor. Drain excess grease with a slotted spoon and set the cooked sausage aside on a paper towel while you build your soup base.

Step 2: In the same large pot, add canned tomatoes and chicken broth and sir to combine. Add the garlic and herb cream cheese and simmer until the cream cheese is fully melted, making the perfect creamy tomato base. Add the cooked Italian sausage back to the pot.

Step 3: Once the cream cheese is melted, add the cheese tortellini and simmer over medium heat for 10 minutes until the tortellini cooks through and is tender. Toss in baby spinach or fresh spinach and stir to combine.

How to Store Creamy Sausage Tortellini Soup

Store leftovers in an airtight container in the refrigerator for 3-4 days. It reheats beautifully in the microwave or on the stove the next time you’re craving comfort food.
