Mexicali Rice starts with ground beef and has a seasoned tomato sauce. Top it with cheese and it is ready in about 30 minutes. A hearty and delicious weeknight meal the family will love!

Mexicali Rice

Spanish rice is a delicious side dish for your favorite Mexican food ... Mexicali Rice is Spanish Rice with Beef and is a delicious main dish. Serve it in bowls with a variety of toppings. My favorite thing about this recipe is that it is made using only one pan with ingredients you likely have in your pantry. It is easy and flavorful! If you think the family may need a little more food, serve it with a side of refried beans! 


This is another recipe that I have had for so long that I don't remember who gave it to me. Regardless, it's delicious and you need to add it to your meal rotation because it's so easy! Your taste buds will thank you! 


What You Need

  • Ground Beef

  • Chicken Broth

  • Tomato Sauce

  • Chili Seasoning Mix

  • Minute Rice, uncooked

  • Green Bell Peppers

  • Shredded lettuce, optional

  • Fresh Tomato, optional

  • Sour Cream, optional

  • Cheddar Cheese or Monterey Jack Cheese, optional

  • Red Onions or Green Onion, optional


Tips for Making Mexicali Rice

  • Add more favorite taco toppings like taco sauce, black olives, guacamole or red pepper flakes

  • Add black beans, pinto beans, red beans, kidney beans or corn to this dish

  • Boneless chicken breast may substitute the ground beef

  • Serve with warm flour tortillas, corn tortillas or top with corn chips, crushed tortilla chips or tortilla strips

How To Make Mexicali Rice

Once you have the ground beef browned, add the remaining ingredients as directed and it's ready in about 15 minutes.


Step 1: In a large skillet with olive oil, brown beef over medium heat until done and drain off any excess fat.  Add chicken broth, tomato sauce and chili seasoning mix and let simmer for 5 minutes.

Step 2: Stir in the uncooked Minute Rice and green pepper. Remove from heat and cover. Let stand for at least 5 minutes. Fluff with fork.

Step 3: Serve in a bowl and garnish with cilantro, cheddar cheese, sour cream, lettuce, fresh tomato and lime juice (all optional).

How to Store Mexicali Rice

Once the Mexicali Rice is at room temperature, store it in an airtight container in your refrigerator for up to 3 days. This meal heats up well in the microwave the next day. Simply add a couple of teaspoons of beef broth or cold water then cook in a microwave safe bowl in one minute increments, stirring after each cook time, until warm.
