When the weather starts to cool down in the Midwest, I find myself reaching for all of my favorite comfort food recipes. My mother-in-law and I started making this Lasagna Soup not long before she passed away and we kept tweaking it here and there. From there, I kept working on the recipe, learning something every time I made it. While there are many versions available online, this one is has become a favorite with my family. I also love that you can make this soup ahead of time. The flavors have even more time to come together, making leftover lasagna soup just as good the next day. This Lasagna Soup is one of those recipes I make when I want all the classic lasagna flavor without spending the time layering everything in a baking dish. It has Italian sausage, tender broken lasagna noodles, a rich tomato broth, and plenty of Italian seasoning. Then, just when you think it couldn't get any better, each bowl is finished with a scoop of the cheese mixture. It is everything you love about traditional lasagna in soup form, and it is such a comforting soup for a chilly day or cold winter night.

Tips for Making Lasagna Soup
Use Italian sausage for lots of flavor. I like using Italian sausage because it adds so much Italian flavor to the soup. You can use mild or hot sausage depending on what your family likes.
Don't skip the tomato paste. A little tomato paste adds depth and helps create that rich tomato broth that makes this soup taste like lasagna.
Break the noodles into small pieces. You will notice different pasta in the pictures. That was part of the testing I did. Regular lasagna noodles work perfectly, but they have to be broke into small pieces before adding them to the pot because as they cook, they expand (I had way too many the first few times I made it). You can also use mafalda pasta or another type of pasta that you have on hand.
Watch the noodles. Once you add the broken lasagna noodles, cook until they are tender. You don't want to overcook them, especially if you plan to have leftover soup.
Use medium to medium low heat when simmering. After bringing the soup to a boil, reduce the heat to medium-medium low and let it simmer until the noodles are tender and the flavors have come together.
Don't forget the cheese. The cheese mixture is what really makes this soup taste like lasagna. I like to add a dollop of a mixture of ricotta cheese, mozzarella cheese and parmesan cheese to each bowl. The combination of these cheese types gives you that classic lasagna flavor.

How to Make Lasagna Soup
Step 1: Chop enough onion to make ½ cup and set aside. In a large pot or skillet, cook the Italian sausage, ground beef, and chopped onion over medium heat. Once the onion has softened, add the minced garlic and continue cooking until the meat is completely cooked through. Drain any excess grease.

Step 2: Add 6-ounce can of tomato paste, 4 cups beef broth, 28 ounces diced tomatoes, and 24 ounces marinara sauce. Stir to combine, then add the Italian seasoning, salt, and pepper. Bring the soup to a boil, then reduce the heat to medium-low. Add 6 to 8 lasagna noodles, broken into small pieces, and cook until the noodles are tender, about 20 minutes. If the noodles absorb too much of the liquid, add ½ to 1 cup additional beef broth. During the last 10 minutes of cooking, stir in ½ cup heavy cream.
Step 3: While the soup is simmering, combine 10 ounces ricotta cheese, ½ cup Parmesan cheese, and 1 cup mozzarella cheese in a small bowl. Mix until well combined. Ladle the finished soup into bowls and top each with a generous scoop of the cheese mixture. Serve immediately.

How to Store Lasagna Soup
If you have leftover soup, let it cool to room temperature before transferring it to a safe container. Store lasagna soup in an airtight container in the refrigerator for 3-4 days. Keep in mind that the noodles will continue to absorb the broth as the soup sits. If you know you are making the soup ahead of time, you can cook the noodles separately and add them when you're ready to serve. This is also a great option if you plan to freeze the soup.
When reheating leftover lasagna soup, you may need to add a little extra beef broth to loosen it up.

A big bowl of Lasagna Soup really doesn't need much alongside it, but I never complain when there is garlic bread on the table. Crusty bread is perfect for soaking up the rich tomato broth.
This is also one of those recipes that works well for a busy weeknight. The prep time is simple, everything cooks in one pot, and you have a hearty dinner that tastes like you spent much more time in the kitchen.
