I've had this recipe tucked away in my recipe box for years and was making it long before we had children. Once I became a busy working mom, we settled into a regular lineup of meals I knew everyone would eat, and I rarely introduced new recipes just to keep the peace at the dinner table. If you know, you know! I'm so glad I pulled this one back out because it's every bit as delicious as I remembered. So, If you're looking for a delicious meal that's easy enough for a busy weeknight dinner but tastes like it came from your favorite Italian restaurant, this One-Pan Italian Chicken is the answer. 


Juicy, tender chicken is seasoned with Italian seasoning, minced garlic, and onion, then cooked until golden brown before being combined with a flavorful tomato sauce. Everything comes together in one skillet, making cleanup just as easy as dinner. Serve it over fettuccine noodles or your favorite kind of pasta for a meal the whole family will request again and again.


What You Need

  • Chicken Breasts or Chicken Thighs

  • Olive Oil or Butter

  • Diced Tomatoes or Crushed Tomatoes

  • Onion

  • Minced Garlic

  • Italian Seasoning

  • Salt 

  • Black Pepper

  • Fettuccine

  • Parmesan Cheese


Tips for the Best One-Pan Italian Chicken

  • Let the chicken breasts sit at room temperature for about 15 to 20 minutes before cooking. This helps them cook more evenly and stay juicy.

  • Be sure to season the chicken generously with Italian seasoning, garlic powder, and black pepper before adding it to the pan for the best flavor.

  • Freshly minced fresh garlic delivers the richest flavor, but jarred garlic works in a pinch

  • Serve with garlic bread and a simple salad for a complete meal

How to Make One-Pan Italian Chicken

Step 1: Season 4 boneless, skinless chicken breasts or thighs with Italian seasoning, garlic powder, salt and black pepper. Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat until hot. Brown chicken until golden on both sides, about 8 to 10 minutes. Remove from pan and set aside.

Step 2: In the same skillet, add 1/2 cup onion and 1 teaspoon minced garlic and cook until onions are translucent. Add 2-14.5oz cans of diced or crushed tomatoes, 2 tablespoons Italian Seasoning and 1 teaspoon each of salt and black pepper. If using diced tomatoes, you may crush to smaller pieces using a potato masher. Simmer the tomato sauce for 5 minutes, stirring occasionally with a wooden spoon to scrape up all the flavorful browned bits from the pan. Taste the sauce and adjust the seasoning as needed, adding more salt, pepper, or Italian seasoning to suit your preference.

Step 3: Return the cooked chicken to the pan with the tomato sauce. Spoon sauce over the top of the chicken. Cover pan and allow to simmer on medium low for 15-20 minutes or until the chicken has reached an internal temperature of 165°F.

Step 4: While chicken is simmering, cook the fettuccine noodles in a large pot of water until al dente for the best texture. Plate the fettuccine noodles and top with the cooked chicken, seasoned tomato sauce, and Parmesan cheese.

How to Store One-Pan Italian Chicken

This delicious dinner keeps well in the refrigerator and reheats beautifully. Store leftovers in an airtight container in the refrigerator for up to 3 days and warm individual portions in the microwave when ready to enjoy.
