This Rhubarb Dump Cake Dessert is a delicious dessert made with simple ingredients! After you have the rhubarb cleaned and diced, there is only 10 minutes of preparation time plus baking! You simply combine all the ingredients in a baking dish and bake. It is suitable for both frozen or fresh rhubarb. The delightful strawberry flavor of the gelatin is complemented by the cake mix topping, creating a texture reminiscent of a fruit crisp or cobbler.


As an avid fan of tart rhubarb, I often express my love for it on my blog. Every Spring, my generous neighbor supplies me with tons of rhubarb. I have always enjoyed this rhubarb dessert when my mother-in-law made it, and now I am excited to share the recipe with you. Even if you haven't developed a taste for rhubarb yet, this great recipe is sure to win you over with its delightful flavors!


What You Need

Ingredients

  • Diced or Chopped Rhubarb

  • Sugar

  • Strawberry Jell-o Mix

  • White Cake Mix

  • Water (or Milk)

  • Butter, melted








Tips for Making Rhubarb Dump Cake Dessert

  • Clean the rhubarb with cold water and dry with a paper towel ensuring all dirt is removed; remove the leafy end and bottom of the stem and discard; dice the rhubarb into small chunks

  • Rhubarb may be purchased at your local farmers market or the grocery store, during rhubarb season

  • If you want to add frozen or fresh strawberries, substitute 1 cup of rhubarb for 1 cup of strawberries, making it a strawberry rhubarb dump cake

  • A yellow cake mix may substitute the white cake mix and any brand will work like Duncan Hines, Betty Crocker, etc. 

  • Frozen rhubarb may be used; remember to thaw the rhubarb and drain off any excess liquid before adding to the recipe

  • Substituting the water with milk will give it a rich flavor

How to Make Rhubarb Muffins

Cleaning and dicing of the rhubarb takes the most time to make this recipe! Once you have that done, just layer as directed for a delicious dessert! 

Step 1: Heat oven to 350°F and prepare a 9x13 inch pan with non-stick cooking spray. Clean and dice rhubarb and set aside. Melt butter in microwave or on stovetop and set aside.

Step 2: In the prepared pan, place diced rhubarb in a single layer and sprinkle sugar over the top of rhubarb. Do not stir.

Step 3: Evenly layer the strawberry Jell-o dry mix then the box of white cake mix over the top of the sugar-rhubarb layer. Do not stir.

Step 4: Pour water (I prefer milk) evenly on top of the dry cake mix then drizzle with melted butter. Do not stir! Bake in preheated oven for 40-45 minutes or until the cake mix layer turns a beautiful golden brown.

How to Store Rhubarb Dump Cake Dessert

Store this easy Rhubarb Dump Cake recipe in an airtight container or wrapped in plastic wrap and store at room temperature for 1-2 days or in the refrigerator for 3-4 days. This recipe may also be frozen for up to 3 months.
