I have been in the mood for cookies lately. Do I need cookies? Absolutely not. But I love experimenting with new cookie recipes, especially ones passed down through family collections. My husband’s mom, aunt, and grandma all have some interesting cookie recipes, and this one kept showing up again and again. I had never made these cookies before because my husband doesn’t like pineapple, so I always skipped right past it even though it sounded delicious. Now that I have plenty of people happy to take baked goods when I’m testing recipes for the blog, that is no longer a concern. This great recipe feels like something straight out of a home economics class, made with simple ingredients and easy to prepare.


Pineapple Drop Cookies are a sweet throwback dessert that delivers a bright tropical flavor with bits of pineapple in every soft bite. Using crushed pineapple gives these soft pineapple cookies their great pineapple flavor, while the cookie dough bakes up golden brown with tender bottom edges. What You Need

  • Butter

  • Brown Sugar

  • White Sugar

  • Vanilla Extract

  • Eggs

  • Crushed Pineapple

  • All Purpose Flour

  • Baking Powder

  • Baking Soda

  • Powdered Sugar

  • Reserved Pineapple Juice


Tips for Making Pineapple Drop Cookies

  • If desired add 1/4 cup chopped maraschino cherries and/or 1/2 cup chopped pecans to the batter.

  • Bring the butter and eggs to room temperature so the batter will cream smoothly with the sugars.

  • Mix ingredients just until combined to keep cookies soft and tender.

  • Leave space between cookies so they bake evenly and do not run together.

  • Watch the bottom edges and remove cookies when they are lightly golden for a softer texture.

How to Make Pineapple Drop Cookies

Step 1: Preheat oven to 350°F and line a baking sheet with parchment paper and set aside. Drain pineapple reserving the juice in a small bowl for the glaze. In a separate bowl, combine 2 cups flour, 1 teaspoon baking powder and 1 teaspoon baking soda. Stir and set aside.

Step 2: In a large mixing bowl or the bowl of a stand mixer with the paddle attachment, cream together 1/2 cup softened butter, 1/2 cup brown sugar, 1/2 cup white sugar, 1 beaten egg, 1 teaspoon vanilla extract and 3/4 cup drained crushed pineapple.

Step 3: Slowly add the flour mixture to the wet ingredients and mix just until combined, do not over mix. Drop by teaspoonful on to prepared baking sheet and bake 8-10 minutes or until the cookies are golden brown. Let cookies rest briefly on the baking sheet, then transfer to a wire rack to cool completely

Step 4: For the pineapple glaze, whisk together 1 cup powdered sugar and 2-3 tablespoons of reserved pineapple juice in a small bowl. Drizzle over the top of each cookie, once cooled. Allow the glaze to dry before transferring to serving platter or storage container.

How to Store Pineapple Drop Cookies

Store the cookies in an airtight container in a cool, dry place at room temperature for 2–3 days. For longer freshness, store them in the refrigerator.
