How to Make Pineapple Drop Cookies
Step 1: Preheat oven to 350°F and line a baking sheet with parchment paper and set aside. Drain pineapple reserving the juice in a small bowl for the glaze. In a separate bowl, combine 2 cups flour, 1 teaspoon baking powder and 1 teaspoon baking soda. Stir and set aside.Â

Step 2: In a large mixing bowl or the bowl of a stand mixer with the paddle attachment, cream together 1/2 cup softened butter, 1/2 cup brown sugar, 1/2 cup white sugar, 1 beaten egg, 1 teaspoon vanilla extract and 3/4 cup drained crushed pineapple.Â

Step 3: Slowly add the flour mixture to the wet ingredients and mix just until combined, do not over mix. Drop by teaspoonful on to prepared baking sheet and bake 8-10 minutes or until the cookies are golden brown. Let cookies rest briefly on the baking sheet, then transfer to a wire rack to cool completely

Step 4: For the pineapple glaze, whisk together 1 cup powdered sugar and 2-3 tablespoons of reserved pineapple juice in a small bowl. Drizzle over the top of each cookie, once cooled. Allow the glaze to dry before transferring to serving platter or storage container.Â
