This Soft & Chewy Monster Cookies recipe comes from my mother-in-law, who made them for years! There’s something so special about walking into her kitchen and being greeted by the warm, comforting aroma of cookies baking. And, of course, enjoying a freshly baked cookie straight from the oven was always a highlight. I’m a huge fan of Monster Cookies because they’re bursting with texture and flavor in every bite. Packed with creamy peanut butter, gooey chocolate chips, and colorful M&M’s, how could they not be amazing? If you love a cookie that’s chewy, crunchy, and perfectly sweet, this recipe is a must-try! One of my favorite cookies! 


Monster Cookies are a unique type of cookie that combines peanut butter, oats, and chocolate into one unbeatable taste. Unlike classic peanut butter oatmeal cookies, this recipe calls for quick oats and are flourless, giving the cookies their signature chewy texture. Some versions even include butterscotch chips, white chocolate chips, or Reese’s Pieces for an extra punch of flavor.


What You Need

  • Eggs

  • White Sugar

  • Brown Sugar

  • Vanilla

  • Corn Syrup

  • Butter, melted

  • Baking Soda

  • Peanut Butter - crunchy or smooth

  • M&M's

  • Chocolate Chips

  • Old-Fashioned Oatmeal


Tips for Making Soft & Chewy Monster Cookies

  • Make sure your peanut butter and eggs are at room temperature. This helps the dough come together smoothly and ensures even mixing.

  • While it’s tempting to bake right away, chilling the dough for at least 30 minutes helps the cookies hold their shape and results in a thicker, chewier texture.

  • When adding the dry ingredients to the wet, mix just until incorporated. Over mixing can result in tough cookies.

  • Use a cookie scoop or spoon to ensure your cookies are the same size. This ensures even baking and a uniform texture throughout.

  • Line your baking sheet with parchment paper or a silicone baking mat. This helps prevent sticking and ensures your cookies bake evenly.

  • Keep an eye on your cookies in the oven. They should look golden brown around the edges but still soft in the center. They’ll firm up as they cool.

  • Feel free to swap or add extra ingredients! You can toss in some butterscotch chips, peanut butter chips, or even a handful of crushed pretzels for extra crunch.

  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. This helps them set properly and prevents them from falling apart.



How to Make Soft & Chewy Monster Cookies

Step 1:​ In a large mixing bowl using an electric mixer or the bowl of a stand mixer with the paddle attachment, cream the eggs, white sugar, brown sugar, vanilla and corn syrup. Beat until smooth. Add peanut butter and continue mixing until smooth. 


Step 2: In a separate large bowl, whisk together the dry ingredients, including baking soda and old fashioned oats. Gradually add this mixture to the wet ingredients, mixing until combined. Fold in the chocolate chips and M&M. Cover the bowl and refrigerate the cookie dough for 30 minutes.


Step 3: After 30 minutes, preheat oven to 350°F and cover baking sheet with parchment paper. Using an ice cream scoop or cookie scoop, form dough balls and place on the parchment-lined baking sheet. Baking time is 10-12 minutes (for normal size) or 12-14 minutes (for large cookies). Allow the cookies to cool on the baking sheet for 3-5 minutes before transferring the baked cookies to a wire rack to cool completely.
