A sweet and salty treat you will want to try!
I found this recipe in my mom's recipe box after she passed away. I don't remember her making these cookies and in all of years of collecting recipes, I had never heard of Potato Chip cookies so I knew I had to try them. After talking to people about the recipe, I learned these cookies have been around for a very long time, which I assumed since the recipe was in my mom's recipe box!
The texture of the cookie is very much like an oatmeal cookie with the potato chip taking the place of oatmeal, but with a definite sweet and salty taste. I add a few extra potato chips on the top of the cookie before baking and some without and they both get good reviews from family and friends.
My mom's recipe called for caramel chips instead of chocolate chips so that's how I made them the first time. While the taste was really good, once the caramel hardened it became a little too chewy! I learned that a friend has a similar recipe and adds chopped pecans to her Potato Chip cookies, so give that a try if you love pecans. I really like the chocolate chips because it's like a chocolate chip cookie with potato chips and seriously, what is not to like about that!
How to Make the Cookies
Cream together the butter, sugar, brown sugar, eggs and vanilla. Once fully incorporated, add in the dry ingredients and combine. The last step is to add in your potato chips and mini chocolate chips.
Scoop out the cookies and once on your pan, add a few extra potato chips to the top before putting in the oven! I flattened a few and added the potato chips and I left several in the scoop shape and added the potato chips. Both ways came out really well.
Bake the cookies at 350°F for 9-11 minutes or until the edges are brown. Let the cookies rest on the pan for a couple of minutes and then move to a cooling rack.
