Tips for Making Lemon Poppy Seed Bread
The first time I made this recipe I used melted butter and the next time with softened butter; both work well, but I like the butter flavor that the softened butter left in the bread.
Poppy seed may be found in the spice section of your grocery store and give the bread a delicious crunch
The poppy seed may be omitted, if desired, for a delicious lemon bread
Lemon extract may be found near the almond extract and vanilla extract of your local grocery store.

How to Make Lemon Poppy Seed Bread
This recipe comes together quickly; the hard part is waiting for it to bake!
Step 1: Preheat oven to 350°F and spray an 8.5 x 4.5-inch loaf pan with non-stick cooking spray and set aside. Beat together two eggs and set aside. Combine the dry ingredients (flour and baking powder), mix and set aside.
Step 2: In the bowl of a stand mixer with the paddle attachment or a large bowl and a hand mixer, beat the butter and sugar on low speed. Slowly add beaten eggs and lemon extract.

Step 3: Alternate adding the flour mixture with the milk to the wet ingredients until both are fully combined. Add the lemon rind and poppy seed and mix until combined.
Step 4: Pour batter into the prepared pan. Use a rubber spatula to scrape the sides of the bowl to get all of the batter (and the crunchy poppy seeds) out and into the prepared loaf pan and place in the center of the oven rack. Bake in the preheated oven for 50-60 minutes or until a toothpick comes out with a few crumbs but no wet batter. The bread will have a golden brown top. Remove from oven and place on a wire rack to cool.

How to Store Lemon Poppy Seed Bread
Allow the Lemon Poppy Seed Bread to cool completely then wrap in plastic wrap or move to an airtight container. The bread will last up to 3 days at room temperature. Storing the bread in the refrigerator will dry it out faster and is not recommended. You may also freeze the bread after it has cooled and has been wrapped in plastic wrap or parchment paper. Add a layer of aluminum foil and place in a heavy-duty freezer bag. Remember to label as Lemon Poppy Seed Bread and the date made. The bread will last for 2 months in the freezer. To thaw the bread, remove from the freezer and place on the counter. Allow it to reach room temperature before removing it from the packaging.
