There’s nothing quite like the smell of a warm cinnamon coffee cake baking in the oven. This easy cake recipe is perfect for special occasions or when prepping for Christmas morning. The magic starts with a box of yellow cake mix, a few simple ingredients, and topped with a simple glaze that brings it all together. I’ve tried many easy coffee cake recipes, and this one stands out because it creates a perfectly moist cake every single time. The secret? A little instant vanilla pudding mix added right into the cake batter. Trust me, it makes all the difference.


This recipe is from my Mom's collection. I have deep dived into her collection since starting this blog and I am finding all kinds of great recipes and this is another one! My mom liked simple recipes because she was a busy mom of 5 kids and this one fills the bill! 


What You Need

  • Box of Cake Mix - Yellow or White

  • Box of Instant Vanilla Pudding

  • Vegetable Oil or Canola Oil

  • Milk

  • Butter Flavoring

  • Vanilla Extract

  • Eggs

  • Powdered Sugar



Tips for Making Bundt Coffee Cake

  • Be sure to spray your Bundt cake pan with non-stick cooking spray or softened butter. This ensures an easy release and preserves the shape of the cake. When you think you have enough, give it another layer of non-stick cooking spray, ensuring you get every crevice of the pan!

  • For extra richness, substitute whole milk for water in the batter.

  • Use room temperature ingredients like eggs and milk to help the batter mix evenly.

  • Let the cake cool in the pan for about 10–15 minutes before inverting onto a wire rack to cool completely.

How to Make Bundt Coffee Cake

Step 1: Preheat oven to 350°F and prepare your bundt pan with non-stick cooking spray, ensuring every curve is covered so nothing sticks. In a small bowl, combine 1/4 cup sugar with 2 teaspoons cinnamon, mix and set aside. Make sure your eggs and milk are at room temperature so everything blends smoothly.   


Step 2: In a large bowl, combine the dry ingredients (1 package yellow cake mix, 1 package instant vanilla pudding) then add the wet ingredients (3/4 cup vegetable oil, 3/4 cup milk, 1/2 teaspoon butter flavoring and 1 teaspoon vanilla) and combine with an electric mixer on medium speed until smooth. Add eggs, one at a time, and after last egg is added, beat the batter for a full 6 minutes, scraping down the sides of the bowl.

Step 3: Pour half of the batter into the prepared bundt pan. Sprinkle with the sugar and cinnamon mixture. Add the remaining batter on top of the sugar and cinnamon. Bake for 35-45 minutes or until a toothpick comes out clean. Allow the cake to cool in the pan for 15 minutes, then turn out of pan and on to a wire rack.

Step 4: While the cake is cooling, prepare the powdered sugar glaze. In a medium sized bowl add the 2 cups powdered sugar, 3 tablespoons milk, and 1 teaspoon vanilla extract into the bowl. Slowly whisk together until the glaze is smooth and reaches desired consistency. If it is too thick, add more milk one teaspoon at a time. Drizzle over the top of the cake while it is still warm, allowing it to run down the sides to give it that bakery-style finish!

How to Store Bundt Coffee Cake

Store leftovers in an airtight container or wrap tightly with plastic wrap to keep this delicious coffee cake fresh for 2-3 days.
