Easy Creamy Chicken Casserole is the kind of dish that feels like a warm hug—perfect for weeknights, potlucks, or anytime you want something hearty and satisfying. With tender chicken and a rich creamy sauce, this casserole is a family favorite that never gets old. This delicious recipe came from my neighbor and dear friend. We share recipes - it’s one of my favorite things about our friendship. \After just one bite of this delicious dish, I knew it was a keeper. It’s the kind of meal made to be shared—just like she shared it with me. It may become your favorite comfort food. 


What You Need

  • Pasta or Egg Noodles

  • Diced Cooked (Chicken Breasts or Chicken Thighs)

  • Shredded Sharp Cheddar Cheese

  • Cream of Chicken Soup

  • Milk

  • Chopped Pimento


Tips for Making Easy Creamy Chicken Casserole

  • Uses leftover chicken or rotisserie chicken for convenience

  • Try your leftover turkey instead of chicken

  • This dish can be customized to your personal preference such as adding vegetables like bell peppers, frozen peas or broccoli

  • If you'd like add a crunchy topping, add buttery crackers or bread crumbs mixed with melted butter to add a bit of texture to contrast the creamy base. 

  • If you want a spicy kick, add cayenne pepper, red pepper flakes or your favorite spicy pepper

How to Make Creamy Chicken Casserole


Step 1: Preheat oven to 350°F and prepare a 2 quart casserole or 9x13-inch pan and set aside. In a large pot, fill with cold water and cook the pasta according to package directions. 


Step 2: While the pasta is cooking, grab a large bowl and combine the 1 cup cheese, 1 can cream of chicken soup, 1/2 cup milk and 1/4 cup chopped pimentos and mix until smooth. Fold in the 2 cups cooked, diced chicken and 2 cups cooked pasta and mix until combined.

Step 3: Pour the chicken mixture into the prepared casserole or baking dish. Cover with aluminum foil and bake for 30-40 minutes or until bubbling on the edges.  Uncover and top with the remaining 1/4 cup shredded cheddar cheese, return to oven and bake until the cheese melts. Once baked, let it rest for 5-10 minutes before serving so it may thicken slightly and slice more cleanly.

How to Store Creamy Chicken Casserole

Store leftovers in an airtight container in the refrigerator for up to 3 days. This casserole is delicious the next day. Reheat in a microwave safe dish at medium power until warm.


Creamy Chicken Casserole freezes well. Allow the casserole to cool completely, then cover the dish with a layer of plastic wrap and then a layer of aluminum foil on top. When ready to reheat the next time, bring it to room temperature first before moving to the oven.
