Creamy Tuscan Sausage Pasta combines pasta, Italian sausage, sun-dried tomatoes, and spinach, all enveloped in a rich cream sauce. This recipe is made with simple ingredients and can be ready in about 30 minutes, making it perfect for a delicious pasta dinner on a weeknight!

"Tuscan" refers to a style of pasta dish from Italy's Tuscan region, featuring simple, fresh, high-quality ingredients with a traditional Italian cooking style. 


This recipe came to me from an acquaintance after starting my food blog. My husband doesn't like spinach unless it's covered in sour cream and mayonnaise and served with a cracker, so I avoided making it the first time, thinking he wouldn't enjoy it. Our daughter sometimes joins us for dinner, so I decided to try it when she was visiting! It turned out that everyone loved it!


When I note this Italian sausage pasta recipe is easy, trust me, it is simple to prepare and tastes like a high-quality restaurant dish! The spinach blends in so well that the family won't even notice it's there! 

What You Need

  • Italian Sausage

  • Pasta

  • Chicken Broth

  • Heavy Whipping Cream

  • Garlic

  • Italian Seasoning

  • Parmesan Cheese

  • Fresh Baby Spinach

  • Sun-Dried Tomatoes


Tips for Making Creamy Tuscan Sausage Pasta

  • A 14-inch skillet or larger is necessary for the ingredients to fit properly. Alternatively, a Dutch oven or large cast-iron skillet may be used.

  • I opted for Penne pasta, though you can choose Orecchiette, Farfalle, Cavatappi or Rigatoni pasta instead. 

  • This recipe works with any type of sausage, like mild Italian sausage, sweet Italian sausage, or hot Italian sausage. 

  • I incorporated Parmesan cheese in this recipe; however, Pecorino Romano is also an option, offering a sharper and saltier taste. 

  • Incorporate red pepper flakes to add a bit of spice to this dish.

How to Make Creamy Tuscan Sausage Pasta

Step 1: Coarsely chop sun-dried tomatoes and set aside. Chop the fresh baby spinach and set aside. Brown sausage in a large skillet over medium heat to medium-high heat, breaking it up into crumbles as it cooks. While the sausage is cooking, bring a large pot of water to boil. Add the pasta and cook until al dente.

Step 2: Remove sausage from skillet and keep warm while you make the creamy sauce. Remove excess grease from the same skillet used to cook the sausage. Add the garlic clove to skillet and saute until golden brown. Add heavy cream, chicken broth, grated cheese, and Italian seasoning and mix to combine. Reduce heat to simmer and continue to stir the mixture until the sauce beings to thicken.

Step 3: Add the chopped fresh spinach and sun-dried tomatoes and toss until spinach is wilted. Return sausage to skillet and stir to combine. When the pasta is done, add the drained pasta to the sausage mixture and stir to coat all ingredients. Add more grated Parmesan cheese on top and cover to allow the cheese to melt. Place on a dish and serve.

How to Store Creamy Tuscan Sausage Pasta

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop or in the microwave. Add some milk, cream and/or more Parmesan cheese while reheating to loosen up the sauce and bring back some creaminess.
