Deviled Eggs

A Simple Recipe and a Family Favorite!

I grew up eating sweet deviled eggs. My mom made them with Miracle Whip and vinegar and I loved them because I didn't know any different. When I started cooking on my own, I learned that I'm really not a big fan of vinegar. My sister from another mister introduced me to deviled eggs made with mayonnaise and dill pickle juice and I have never turned back!


If you Google deviled egg recipes, you will find many variations - sweet pickle relish, bacon, jalapeños, minced celery, mashed avocado, etc. In my lifetime, I have tried many different variations of deviled eggs and while most are very tasty, this is the recipe I go back to over and over and make for my immediate and extended family and everyone loves them.


How to Make Deviled Eggs

I'm sure most people know how to boil an egg, but for deviled eggs, you really do need to bring the egg to a hard boil. My mom taught me to boil eggs for seven minutes after they start boiling. I have used that method my entire life and it has never failed me. Give it a try.


Once the eggs are boiled, drain the hot water and immediately move to a cold water bath. I typically run cold water over them a couple of times because they will quickly warm up the water. Once they are cooled, gently peel the shell. Next, slice the eggs in half lengthwise and remove the yolks. Use a fork to mash the yolk and then mix in the mayonnaise and seasonings until creamy. Fill the egg white with this creamy mixture using a spoon or a piping bag. Garnish with paprika.

To make ahead, cook eggs and keep white and yolk mixture separate for up to 2 days. Place the egg white halves on a plate and wrap in plastic wrap. Keep the yolk mixture in a zip-top bag (for easy filling) or in an airtight container. When ready, fill the egg whites with the yolk mixture, garnish and serve.


If there are leftovers, they can be stored in an airtight container in the refrigerator. They will keep for up to 2 days. Leftovers can also be diced and made into an egg salad sandwich! Don't let these Forkin' Good Deviled Eggs go to waste!
