I’ve shared in other posts that we love tailgating at my husband and daughter’s alma mater, something my husband and I have enjoyed for more than 30 years. This recipe comes from a dear friend we tailgate with at every home game. Her Dill Pickle Tortilla Roll Ups are legendary, and if they are not on the table, we have to question if it is really game day. That is how loved they are. We finally asked her for the recipe, and my oldest daughter was the first to start making them for gatherings with her friends, then for family get-togethers. Now I make them whenever she does not, because I love them and truly believe they should always be on our table!Â
What You Need
Cream Cheese
Sour Cream
Mayonnaise
Pickle Juice
Onion Powder
Garlic Powder
Black Pepper
Dill Pickle
Dried Beef
Flour Tortillas
Tips for Making Dill Pickle Tortilla Roll Ups
Use room temperature cream cheese so it spreads easily and creates a thick layer without tearing the tortillas
Use a hand mixer or wooden spoon to cream the mixture
I have only used refrigerated Claussen Spears in this recipe
I prefer to use Carl Buddig Beef, found in the refrigerated section with the deli meat, however dried beef found in the canned meat aisle works as well
For a little extra flavor, add in green onions or diced bell pepper.Â
We double the recipe for large parties or game day tailgates!

How to Make Dill Pickle Tortilla Roll Ups
Step 1: Finely chop the dill pickle spears and set aside. Chop the dried beef into small pieces and set aside.

Step 2: In a large bowl, combine 8 ounces softened cream cheese, 2 tablespoons sour cream, 3 tablespoons mayonnaise, 1 tablespoon dill pickle juice, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1/2 teaspoon black pepper and mix well to combine. A hand mixer helps create a smooth and spreadable texture, but a sturdy wooden spoon works too. Fold in 1 cup chopped pickles and 1 cup chopped dried beef and mix until well combined.Â

Step 3: Spread a thick layer of the cream cheese mixture evenly over each tortilla, going almost to the edge leaving a little room so the mixture does not spread out. Carefully roll the tortillas up tightly around the filling to create neat rolled tortillas. Tightly wrap each tortilla roll in plastic wrap or aluminum foil with the seam side down. Place in the refrigerator to chill for 3-4 hours or overnight.Â

Step 4: After chilling, remove the plastic wrap/aluminum foil and use a sharp knife to cut into inch 1-inch slices. Wipe the blade of the knife with a paper towel between cuts for the cleanest edges. Place on a plate or platter. For best results, serve the Dill Pickle Tortilla Roll Ups at room temperature or slightly chilled depending on your preference.Â
How to Store Dill Pickle Tortilla Roll Ups
Store leftovers in an airtight container in the refrigerator for 3-4 days.Â

This recipe is also delicious as a dip. Make it as outlined above, but simply place the mixture in a bowl and serve it with crackers for easy snacking. We love it both ways and it never lasts long either way.
