I’ve always loved carrot cake, especially the one my Aunt Mary made for Easter, but unfortunately I don’t have her recipe. I also adore cream cheese frosting and sandwich cookies. This recipe brings all those favorites together into one easy, delicious dessert ready in about an hour. For the blog, I made some as sandwich cookies and others simply frosted. Not everyone (or really, just me) needs two cookies filled full of delicious cream cheese frosting, so I made them both ways. Family and friends agreed they were delicious either way, though my favorite will always be the sandwich cookie.

How to Make Carrot Cake Mix Cookies with Cream Cheese Frosting
Step 1: Preheat oven to 350°F and line a baking sheet with parchment paper and set aside. In a large mixing bowl, add one box of carrot cake mix, 2 large eggs, and 1/3 cup vegetable oil. Use an electric mixer or the bowl of a stand mixer with paddle attachment on low speed until just combined. Do not over mix!Â
Step 2: Use a cookie scoop to portion out even cookie dough balls. Place them about 2 inches apart on the prepared cookie sheet. Bake for 8-10 minutes or until the edges are set but the centers still look soft. Allow the cookies to rest on the cookie sheet for a couple of minutes, then transfer to wire rack to cool completely.Â

Step 3: To make the Cream Cheese Frosting, use an electric mixer to beat 8 ounces room temperature cream cheese and 1/2 cup butter together until smooth. Add 2 teaspoons vanilla and continue mixing. Slowing add in 2-3 cups powdered sugar and mix until the frosting is smooth and creamy.
