Cake mix cookies are one of the easiest desserts to make. With just a box of mix and a few simple ingredients, you get soft, chewy cookies every time. Sandwich a layer of creamy buttercream frosting between two cookies, and you have the ultimate treat!

Cake Mix Cookies are are easy, delicious, and completely customizable. This delicious cookie combines the simplicity of a box of cake mix with the fun of decorating each cookie with buttercream frosting. I have other cake mix cookies on my blog and made this one because I wanted to take a sandwich cookie to a game day tailgate and thought this would be perfect because I could decorate the cookie with our team's colors! I was able to find cake sprinkles in my desired color at the local Michael's store.
No history on where this recipe came from because cake mix cookies have been around for 50+ years. I have personally found recipes for them from 1975 and they are still being enjoyed today because they are so easy to make and delicious! The soft, fluffy texture from the prepared dry cake mix makes these cookies ideal for birthdays, parties, AND game day tailgates!

Yellow Cake Mix
Oil
Large Eggs
Powdered Sugar
Unsalted Butter, room temperature

Milk

Tips for Making Cake Mix Sandwich Cookies with Buttercream Frosting
For best results, let your butter and eggs reach room temperature before mixing for the smoothest dough.
Don’t over mix when combining the cake mix, vegetable oil, and whole eggs; just mix until incorporated to keep a chewy cookie texture.
Cool cookies on a wire rack or cooling rack to prevent them from becoming soggy.
Experiment with flavor variations using chocolate cake mix, white cake mix, or strawberry cake mix cookies. The buttercream frosting is delicious between or on top of the cookies!
Consider adding mix-ins of your choice to enhance the texture and flavor of cake mix cookies.

How to Make Cake Mix Sandwich Cookies with Buttercream Frosting
Step 1: Preheat oven to 350°F and line a baking sheet with parchment paper and set aside. In a large mixing bowl, add one box of yellow cake mix 2 large eggs, and 1/3 cup vegetable oil. Use an electric mixer or the bowl of a stand mixer with paddle attachment on low speed until just combined. Do not over mix! Fold in cake sprinkles, if desired.

Step 2: Use a cookie scoop to portion out even cookie dough balls. Place them about 2 inches apart on the prepared cookie sheet. Bake for 8-10 minutes or until the edges are set but the centers still look soft. Allow the cookies to rest on the cookie sheet for a couple of minutes, then transfer to wire rack to cool completely.

Step 3: To make the Buttercream Frosting, beat 1 cup room temperature butter in the bowl of a stand mixer for 3 minutes. Add 1 tsp vanilla extract and slowly add 2 cups powdered sugar and a pinch of salt. Scrape down the sides of bowl and slowly add the milk, 1 tablespoon at a time until you reach the desired consistency. If you want whipped buttercream frosting, mix the frosting for 5-7 minutes.

Step 4: Spread or pipe the buttercream frosting on the flat side of one cookie, then gently press another cookie on top to make a sandwich. Roll the cookie edges in sprinkles, if desired, for a fun and festive cookie!
