The recipe is quick to put together with simple pantry staples; the only thing I had to pick up was a can of apple pie filling! Tips for Making Apple Coffee Cake
Make sure eggs are at room temperature because it helps the wet ingredients mix smoothly with the dry mixture and gives the best texture.

How to Make Apple Coffee Cake
Step 1: Preheat oven to 325°F. Prepare a 9x13-inch pan with non-stick cooking spray or line with parchment paper and set aside. In a medium bowl, combine 2 cups flour, 1 teaspoon baking soda, 1/4 teaspoon salt and mix to combine and set aside.

Step 2: In a large bowl, combine 1 cup white sugar, 1 cup vegetable oil, and 4 eggs (room temperature) and mix well on medium speed with a hand mixer or stir well to combine. Slowly add the dry ingredients to the wet ingredients as you continue to mix until all ingredients are well combined.

Step 3: Spoon half of the cake batter into bottom of the prepared pan. Put 1 can of pie filling over the batter and spread evenly. Pour the rest of the batter evenly over the apples. In a small bowl, combine 1/4 cup sugar with 1 teaspoon cinnamon and mix to combine. Shake the cinnamon sugar mixture over the top of the batter. Bake for 40 minutes or until a toothpick comes out clean. Allow the coffee cake to cool before cutting into squares.

How to Store Apple Coffee Cake
Once the Apple Coffee Cake has cooled completely, wrap it in plastic wrap and place it in an airtight container to keep the texture of the cake soft and moist. It will stay fresh at room temperature for up to three days. You may also refrigerate it for slightly longer storage. If you need to store it longer, wrap tightly in aluminum foil and place in a freezer bag and freeze for up to two months.
