Tips for Making Three-Cheese Chicken Bake
If you're looking to reduce fat without losing flavor, swap skim milk in place of whole milk.
If you're not a fan of cottage cheese, trying ricotta cheese or cream cheese for a creamier flavor.
If you'd like more color, use red bell pepper or mix it up with both red and green
Mozzarella cheese can replace the Parmesan cheese, if desired.

How to Make Three Cheese Chicken Bake
Step 1: Preheat oven to 350° degrees. Prepare a 9x13-inch baking dish with non-stick cooking spray. Cook 8 lasagna noodles in boiling salted water according to package directions; drain and set aside.

Step 2: In a large skillet, saute onion (1/2 cup) and green pepper (1/2 cup) in 3 tablespoons butter until tender. Stir in one can of Cream of Chicken soup, 6 ounces of sliced mushrooms (optional), 1/2 cup chopped pimiento, 1/3 cup milk and 1/2 teaspoon basil and cook, stirring frequently, until it comes to a boil. Remove from heat and add 2 cups cooked chicken and combine until all chicken is well coated.

Step 3: Lay half of the cooked lasagna noodles in the prepared baking dish. Top with half of the cooked sauce, cottage cheese, American and Parmesan cheese. Repeat layers except for the American and Parmesan cheese.

Step 4: Bake for 30-40 minutes or until the edges are bubbly, then add the American and Parmesan cheese and bake for 2 minutes more.

Let the dish cool completely, then transfer leftovers to an airtight container. Store in the fridge for up to 3–4 days. Reheat slowly in the microwave, adding a splash of milk to loosen the sauce if it thickens too much.
