Our family grills year-round, so I’m always on the lookout for new recipes to try. I came across this one in a church cookbook from the 1970s and was a little surprised to see tequila included, especially for that time. My husband loves anything with chipotle chili powder, so I knew it was a must try, and it definitely did not disappoint. We first made it last summer and loved it, so I made it again on a warm day this spring, and it was even better than I remembered. If you enjoy grilled chicken, this one is worth adding to your list!


This one is definitely a bold and tasty dish that brings the flavor to your table with minimal effort. This recipe combines fresh lime juice, lime zest, and simple ingredients to create a great marinade that transforms boneless skinless chicken breasts or chicken thighs into juicy, flavorful chicken. Whether you’re planning a casual cookout, celebrating Cinco de Mayo, or just need an easy weeknight dinner, this chicken is a great option the whole family will love.


What You Need

  • Boneless, skinless chicken breasts

  • Olive Oil

  • Tequila

  • Lime Zest

  • Lime Juice

  • Cumin

  • Chipotle Chili Powder

  • Minced Garlic


Tips for the Best Tequila Lime Grilled Chicken

  • Use fresh lime juice and lime zest for the most vibrant flavor; bottled juice won’t give the same fresh flavor.

  • Marinate in a large Ziploc bag or airtight container to evenly coat the chicken pieces.

  • Don’t skip the resting time, letting the chicken rest keeps it juicy and prevents dryness.

  • If you don’t have a grill, a grill pan or even baking works well in a simple kitchen setup.

  • Avoid overcooking, which can lead to a leathery texture, watch your cook time carefully.

How to Make Tequila Lime Grilled Chicken

Step 1: In a small bowl combine 2 tablespoons olive oil, 2 tablespoons tequila, the zest and juice of 1 fresh lime, 1/2 teaspoon cumin, 1/2 teaspoon chipotle chili powder, 1 teaspoon minced garlic, 1/2 teaspoon salt and 1/2 teaspoon black pepper and mix to combine. I used Jose Cuervo Silver tequila, but any brand will work because the alcohol cooks off as the chicken grills. Pour the marinade over your chicken breasts in a large Ziploc bag or cover with plastic wrap. Move to the refrigerator and let the marinade work its magic for 1 to 3 hours (or overnight for best results).

Step 2: When you’re ready to cook, preheat your grill, grill pan, or oven to medium heat (350°F). Lightly oil the grill grates with vegetable oil or avocado oil, then cook the chicken for about 5 to 7 minutes per side, depending on thickness, brushing with the remaining marinade as it cooks. Continue until the internal temperature reaches 165°F. Transfer to a plate, cover with aluminum foil, and let the chicken rest for 3 to 5 minutes before slicing to keep it juicy.

How to Store Tequila Lime Grilled Chicken

Store leftover chicken in an airtight container in the fridge for 2–3 days. It is perfect for salads or wraps the next day.


To bring the whole meal together, you can serve it alongside cilantro lime rice, black beans, or even a fresh Mexican street corn salad for a complete meal. Or, if you're like me, with a tossed salad which made a delicious meal!
