I enjoy collecting recipes and whenever someone shares a recipe, I eagerly add it to my collection. Do you ever come across recipes that sound great but you never actually get around to making them? That is exactly what happened with this particular recipe. I've had it in my collection since the 1980s, yet it sat untouched for many (many) years. It wasn't until a few years ago that I finally decided to give it a try for dinner one night. To my surprise, I found it incredibly easy to make with just a few simple ingredients, and the taste was absolutely delicious! Learn from my experience and don't wait any longer to try out this recipe!


I love easy chicken recipes and Grilled Lime Herb Chicken is another one. Simply make the marinade, let it soak in a marinade of dried or fresh herbs then grill. It is delicious hot with a side dish or served over a bed of rice or cold in fresh salads or pasta salad. Yep, it's that good! 


What You Need

Ingredients

  • 2 large skinless chicken breasts, chicken tenders or chicken thighs

  • Lime Juice

  • Italian Salad Dressing

  • Minced Garlic

  • Dried or Fresh Basil

  • Dried or Fresh Thyme

  • Salt

  • Black Pepper









Tips for Making Grilled Lime Herb Chicken

  • To make the grilling easier, you can pound the chicken for even thickness

  • I like to use fat free Italian salad dressing; the flavor is there but the calories are not!

  • Add Italian seasoning, if desired

  • Serve it with green beans, tossed salad, brown rice, or sweet potatoes

  • If it's not grilling season, this can be made in a large frying pan

  • This is a great chicken dish to use for meal prep 

  • Please note I have only made this recipe on a gas grill

How to Make Grilled Lime Herb Chicken

Step 1: In a large bowl, combine the lime juice, Italian dressing, minced garlic, basil, thyme, salt and black pepper and mix well. Pour 1 cup of the marinade into a large resealable plastic bag. Place chicken in the bag and marinate for at least 15 minutes (the longer you leave it the better it will be). Store in the refrigerator while marinating, shaking often to keep the chicken soaking up the delicious flavor. Keep the remaining marinade for basting the chicken on the grill.

Step 2: Preheat the grill to medium heat. Grill chicken over medium heat until you reach an internal temperature of 165°F (or about 30 minutes of cooking time). Use a meat thermometer to check the internal temperature. Baste the chicken frequently with the marinade while cooking and use tongs to turn the chicken so you can marinate on both sides. Just before removing the chicken from the grill, brush the remaining marinade over the chicken before serving!

Store the leftovers of this juicy chicken breast in an airtight container in the refrigerator for up to 3 days.
