These Red Velvet White Chocolate Chip Cookies captures some of the things I enjoy in the kitchen from the classic red velvet flavor to the buttery vanilla aroma that fills the bowl of my mixer. The deep red color reminds me of Christmas and Valentine’s Day, and every batch is a treat we look forward to, especially with those creamy bursts of white chocolate in every soft bite.

I’ll be honest, as a kid I never understood how anyone made red cake or cookies. When I finally learned that red velvet starts with cocoa and red food coloring, I was completely fascinated. It isn’t a chocolate cake or cookie, though it does use cocoa powder for flavor. Its subtle cocoa notes, gentle tang, soft texture, and unmistakable red color give it a personality all its own. Red velvet recipes have always felt like their own little category of dessert, comforting and familiar, yet completely unique.

This recipe came from my mother-in-law’s collection. She was a red velvet fan and especially loved her niece’s homemade Red Velvet Cake, which all of us looked forward to. It didn’t surprise me to find this cookie recipe tucked among her cards, along with several other red velvet treasures, because she was always experimenting in the kitchen and putting her own touch on every recipe she loved.

How to Make Red Velvet White Chocolate Chip Cookies

Step 1: Preheat oven to 350°F. Line a cookie sheet with parchment paper to help the cookies bake evenly. In a large bowl, combine 1 1/2 cups flour, 1 1/2 tablespoons cocoa powder, 1 teaspoon cornstarch, 3/4 teaspoon baking powder, and 1/4 tsp salt. Whisk the dry ingredients so the flour mixture stays light and even.

Step 2: In the bowl of an electric stand mixer with the paddle attachment, combine the 1/2 cup softened butter, 1 cup sugar, 1 tsp white vinegar and mix for 3-4 minutes. Mix in the egg. Add the 1 1/2 teaspoon vanilla extract and 1 1/2 teaspoon red food coloring and mix until all ingredients are blended together.

Step 3: With the mixer on low speed, slowly add in the dry ingredients and beat until just combined. Fold in half of the white chocolate chips, reserving the other half for pressing into the top of each rolled cookie, baked cookie, or both (like me).

Step 4: Scoop heaping tablespoonfuls of dough (to create thicker cookies with soft centers) and shape into balls. Place on the prepared baking sheet about 2 inches apart, giving them room to spread. Bake for 10-12 minutes. Once out of the oven, press in a few extra white chocolate chips! Allow the cookies to cool on the cookie sheet for a few minutes before transferring to a wire rack to cool completely.

How to Store Red Velvet White Chocolate Chip Cookies

Store cookies by first allowing them to cool completely on a wire rack, then placing them in an airtight container with parchment paper between layers if you need to stack them. They keep well at room temperature for about four to five days, and adding a small piece of bread or a marshmallow to the container can help maintain their softness. For longer storage, freeze the cookies by placing them on a baking sheet until firm, then transferring them to a freezer safe bag or airtight container for up to two months. When you are ready to enjoy them, let them thaw at room temperature.
