Have you ever tried the Cherry Turnovers at Arby’s? I hadn’t either. I didn’t even know they existed until a road trip with a friend. I was honestly surprised by the devotion she had to this flaky little treat. A couple of years later, that same friend was dealing with some medical issues, and I knew exactly what might bring a little comfort. Cherry turnovers. I made them at home and delivered them warm, filled with sweet cherry goodness. In the process of doing this small task for my friend, I discovered something unexpected. Not only did it brighten her day, it sparked a new interest for me too, experimenting with that tasty puff pastry dough.

A couple of years ago, instead of making a classic turnover, I turned that puff pastry dough into a festive Christmas tree. These treats are more commonly made with pie crust as hand pies, but puff pastry is light, airy, and absolutely delicious. These Christmas Tree Pastry Puffs with cherry pie filling have quickly become one of my favorite desserts to make when time is short but I still want something festive and homemade. The flaky layers of puff pastry, sweet cherry filling, and golden brown finish make them look like they came straight from a bakery. They are perfect for cookie trays and holiday parties, so if you are looking for a last minute, easy holiday treat, this simple four ingredient recipe is just the thing.

How to Make Easy Puff Pastry Cherry Turnover Christmas Tree

Step 1: Line a baking sheet with parchment paper and set aside. Work on a clean counter and lightly dust with flour before placing the puff pastry sheet down. Use a rolling pin gently to even out the dough without thinning it too much. Cut the Christmas tree shape using a cookie cutter, pressing down firmly so the tree is cut through completely. If needed, use a sharp knife to finish cutting where the cutter did not go all the way through.

Step 2: Spoon cherry filling onto the tree, keeping it centered and avoiding excess liquid. Place the top crusts or second puff pastry sheet over the filling and gently press the edges together. Seal the edges with the tines of a fork and keeping the filling tucked inside as much as possible.

Step 3: Mix egg wash in a small bowl using one egg and a tablespoon of water, then apply with a pastry brush. Sprinkle coarse sanding sugar on top for sparkle and texture. Bake on the prepared baking sheet or cookie sheet in a preheated oven at 400°F. Bake for 12-15 minutes until puff pastry is golden brown. Transfer to a cooling rack and allow to cool in a single layer before serving or storing.
