There’s something about grilling chicken on a warm summer evening that just feels right. This Grilled Honey Lie Chicken has become one of my favorite easy dinners because the simple marinade creates such a perfect balance of sweet, tangy, and savory flavors.

The combination of fresh lime juice, honey, garlic, and the seasonings makes incredibly flavorful chicken. Whether I’m serving it with a fresh salad, turning it into chicken bowls, or saving leftovers for meal prep, this is one chicken recipe I’ll make again and again.

A friend gave me this recipe recently because she knew I had a food blog and knew how much we enjoy grilling. We have had it several times this summer and we love it! The outdoor grill should be set to medium heat because the honey in the marinade can brown quickly. The lower heat allows it to caramelize into a delicious coating on the chicken while keeping the inside juicy and moist.

What You Need

  • Skinless and Boneless Chicken Breasts or Skinless Chicken Thighs

  • Lime Juice

  • Honey

  • Cilantro

  • Minced Garlic

  • Chili Powder

  • Cumin

  • Onion Powder

  • Salt

  • Olive Oil

Tips for Making the Grilled Honey Lime Chicken

  • Because of the acidity from the fresh lime juice, I recommend marinating for a few hours rather than overnight. The lime can change the texture of the chicken if it sits in the marinade too long.

  • Let the chicken sit out for about 15–20 minutes before grilling. This helps it cook more evenly.

How to Make Grilled Honey Lime Chicken

Step 1: Trim fat off chicken breast and put in a large bowl with a lid or a ziplock bag. Cut and squeeze 4 fresh limes for a 1/2 cup of fresh lime juice.

Step 2: In a medium bowl, combine 1/2 cup lime juice from fresh limes, 1/2 cup honey, 2 tablespoons cilantro, 2 tablespoons minced garlic, 1 tablespoon chili powder, 1 tablespoon cumin, 1 tablespoon onion powder, 1 teaspoon salt, and 1 tablespoon olive oil. Mix well. Add chicken, making sure the chicken is completely coated, then cover the bowl or seal the bag and refrigerate to marinate from 30 minutes to 3 hours.

Step 3: Place chicken on the grill and cook slow and low until the internal temperature reaches 165°F.  Check the thickest part of the chicken with a meat thermometer. As the chicken cooks, the honey will carmelize creating a delicious coating! Once you have reached the appropriate temperature, remove from grill. For best results and to help keep all the flavorful juice inside, plate and cover with aluminum foil, allowing the chicken to rest before slicing.

How to Store Grilled Honey Lime Chicken

Store cooked chicken in an airtight container in the refrigerator for up to 3 days.

This delicious chicken makes an easy addition to rice bowls, burrito bowls, or a taco salad. I especially love slicing the leftover chicken and adding it to a crisp salad. The chicken is also delicious the next day, when all those flavors have had even more time to come together.

This is one of those recipes that makes dinner feel special without requiring much effort. I love serving it straight from the grill, but the leftovers are also delicious! Toss the chicken into a rice bowl with black beans and red onion, pile it onto a taco salad, or simply serve it alongside your favorite summer vegetables. It's easy, fresh, incredibly flavorful, and definitely a great recipe to keep in your regular rotation. It's Forkin' Good!
