Buffalo Chips

A combination of ground beef, sausage and Velveeta cheese on rye party bread; this flavorful appetizer will disappear as soon as it's out of the oven!

I have had this recipe since the mid 1980's and usually make this easy appetizer on Christmas with my extended family. As soon as they are out of the oven, these individual appetizers are gone because they are that good. A friend I worked with gave me the recipe and at the time I didn't know that they are also referred to as Hanky Pankies, Polish Mistakes, or Polish Disasters.  They aren't pretty, but this Buffalo Chips recipe is super easy to make and very tasty!  You will want to add this to your appetizer recipe collection!  


What You Need

  • Lean Ground Beef

  • Jimmy Dean Breakfast Sausage (Regular or Hot Pork Sausage)

  • Velveeta Cheese

  • Oregano

  • Garlic Salt (or Garlic Powder)

  • Red Pepper Flakes

  • Rye Party Bread


Tips for Making Buffalo Chips

  • This is an easy make ahead appetizer - prepare the meat mixture and add to bread and bake when you are ready to serve

  • This meat meat mixture can be put in a slow cooker on low heat to spoon over tortilla chips

  • You may use cheddar cheese rather than Velveeta cheese, but the Velveeta cheese gives you the creamy texture

  • Drizzle Worcestershire sauce over the top then a sprinkle of Italian seasoning

  • Sprinkle with green onions before serving, if desired

How to Make Buffalo Chips

Once the meat is browned, add the Velveeta cheese and spices and spread on the Party Rye Bread. So easy and so delicious.


Step 1: Preheat the oven to 400°F.  Line a baking sheet or cookie sheet with parchment paper. In a large skillet, brown the ground beef and sausage on medium heat until fully cooked. Drain the excess fat and return to the stovetop.

Step 2: Add the Velveeta and stir until cheese melts. Add the oregano, garlic salt and red pepper flakes and stir until fully combined.

Step 3: Spread 1 tablespoon of the meat mixture on to party rye slices and place a single layer on the sheet pan. Bake for 5 minutes. Remove from sheet pan and place on a serving plate and repeat the process.  

Place meat mixture on rye party bread and bake.

How to Store Buffalo Chips

The meat mixture should be stored in an airtight container in the refrigerator for up to 3 days. Any leftover baked Buffalo Chips may be stored on a plate covered with plastic wrap or in a plastic bag. Store at room temperature for up to 1-2 days. 


You may also freeze the meat mixture individually for up to 3 months or spread on the bread and store in an airtight container for up to 3 months. When ready to serve, place on sheet pan and bake at 400°F for 10-12 minutes or until heated thoroughly.
