What You Need
Peaches
White Sugar
Lemon Juice
Almond Extract
All Purpose Flour
Salt
Baking Powder
Shortening
Egg

Tips for Making the Old Fashioned Peach Cobbler
Use ripe, fresh peaches, they should be fragrant and slightly soft when gently squeezed. If yours aren’t quite ready, let them sit at room temperature for a day or two.
I have never used canned peaches for this recipe, but they will work just fine! Be sure to drain the peaches before adding to the recipe.
Peel or don’t peel? That’s up to you! I always peel the peaches for a smoother peach mixture.
Adding almond extract to your peach mixture gives it a rich flavor that pairs beautifully with the fruit.
When mixing the dough topping, use a large bowl and mix just until combined; do not over mix!
Bake until the top of the cobbler is golden brown and the hot peaches are bubbling around the edges.
Bake at high heat (400°F) and allow to cool slightly on a wire rack before serving.

How to Make Old Fashioned Peach Cobbler
Step 1: Preheat oven to 400°F. Prepare a 9x9-inch baking dish with non-stick cooking spray or butter. Peel the peaches, remove the pit and cut into slices. Place peaches in the bottom of the prepared baking dish. In a medium bowl combine 1 cup sugar, 1 tablespoon lemon juice and 1/4 teaspoon almond extract and mix. Sprinkle this mixture over the peaches in the prepared pan.

Step 2: In a large bowl combine 1 1/2 cups flour, 1 tablespoon sugar, 3 teaspoons baking powder, and 1/2 teaspoon salt. Mix to combine dry ingredients then cut in 1/3 cup shortening. The mixture will be thick and sticky. In a small bowl, combine 1 egg and 1/2 cup of milk and beat. Add to the flour mixture and mix just until it is combined and the batter is moistened. Do not over mix. Pour batter over the peaches then sprinkle with 2 tablespoons sugar (cinnamon or nutmeg may be added as well, optional). Bake for 30 minutes or until the peaches are bubbling around the edges and the cobbler is golden brown.

How to Store Old Fashioned Peach Cobbler
Let the peach cobbler cool completely at room temperature. Cover the dish tightly with plastic wrap, or transfer to an airtight container. Store in the fridge for up to 3–4 days.
To reheat, warm a serving in the microwave or oven until heated through. Bonus points if you add another scoop of vanilla ice cream on top!
