I've had this recipe since the 1980's and got it from a friend of a friend! However, I didn't make the bars often because my kids always love making s'mores over an open fire. I always loved watching them try to cook the marshmallow to perfection as we patiently waited to put it on their graham cracker and chocolate. Whether on vacation or in our own backyard, it was a great summer and fall tradition and I always made sure I had the ingredients on hand, just in case! My kids are adults now and I still make sure I have the ingredients on hand ... just in case!
Since Mother Nature decided to turn the heat on in the Midwest this week, I thought it was a great time to share this delicious no-bake recipe!
What You Need
Light Corn Syrup
Butter
Milk Chocolate Chips
Vanilla Extract
Golden Grahams Cereal
Mini Marshmallows
Tips for Making Indoor S’mores Bars
Once I have the chocolate mixture prepared, I use a large mixing bowl to combine cereal and marshmallows so everything gets evenly coated.
For a firmer bar, let the bars cool completely at room temperature before cutting into inch squares.
Be sure to press cereal mixture firmly into a 9-inch pan using the back of spoon to create an even layer.
Add a teaspoon vanilla to the melted mixture to round out the flavor and give it that homemade magic.

How to Make Indoor S'mores Bars
Step 1: Butter a 9x9-inch pan and set aside. In a large saucepan (3-quart saucepan), heat corn syrup (2/3 cup) and butter (2 tablespoons) to a boil over low heat while stirring. Remove from heat and add 2 cups chocolate chips and 1 teaspoon vanilla extract and stir until chocolate chips are melted.

Step 2: Fold in 4 cups of Golden Grahams cereal, one cup at a time, stirring gently, until all cereal is coated (this can be done in a large bowl) Fold in 1 1/2 cups of mini marshmallows and stir. Press mixture into the prepared 9x9-inch pan. Sprinkle with 1/2 cup marshmallows, if desired. Let stand until firm, about 1 hour, then cut in to bars!

How to Store Indoor S’mores Bars
Once the bars are set, cover them with plastic wrap or store them in an airtight container at room temperature. These cereal bars are best enjoyed within 2–3 days, though they’ll keep their chewy texture for up to a week. If you're making these ahead for easy entertaining make-ahead apps, layer parchment paper between bars to keep them from sticking together.
