These Thin Mint–style cookies start with a Ritz cracker base and are dipped in melted Andes Mints for a smooth, rich chocolate mint coating that’s simply irresistible. I’ve had this recipe for a while but for some reason, it never made it onto my Christmas platter lineup! Every year I tend to make the same treats because they’re what my family and friends look forward to, but this year I promised myself to step out of my comfort zone. This easy recipe was the perfect place to start. It’s quick, easy, and incredibly delicious. If you need a last-minute dessert to share at a holiday party, this one’s a must. I made 36 in about 15 minutes, and they disappeared just as fast!

How to Make Homemade Ritz Cracker Thin Mints
Step 1: Line a baking sheet or cookie sheet with parchment paper or wax paper to prevent sticking.
Step 2: Remove the Andes Mints from their wrappers and place in a microwave safe bowl. Melt Andes chocolate mints in 30 second bursts, stirring after each cook time until the mixture is smooth and creamy. Use a fork to dip plain Ritz crackers into the melted Andes Mints, ensuring coverage on both side. Give the fork a gentle tap on the side of the bowl to remove excess chocolate and place on the prepare baking tray.
